some early horticultural experiences

my mom made (makes) the best zucchini bread in the world. i'm pretty sure she was disguising healthy food as sweets before jessica seinfeld was even born.

here's the recipe:
3 eggs
3 teaspoons vanilla
1 cup vegetable oil
1.5 c sugar
1 teaspoon salt
1 cup chopped nuts or chocolate chips
2 cups peeled and grated zucchini, rinsed and drained
3 cups flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1.5 teaspoon ground cinnamon

Preheat oven to 325 degrees.
Grease (2) 8x4 loaf pans
Break eggs into mixing bowl and beat well
Beat in vanilla followed by oil & sugar
Stir in grated zucchini.
Sift together flour, baking soda, baking powder, cinnamon and salt. Stir into egg mixture.
[Thoroughly stir in nuts or chocolate chips]
Divide the batter between the two greased loaf pans.
Bake in preheated 325 degree-oven for 55 minutes or until done.
Allow to stand in pans 10 minutes then remove to wire racks to cool.

By now you're exhausted, so go enjoy a cold glass of vodka lemonade

  3. Thank you for sharing this recipe. And thank your mom too. When our garden produces a gracious plenty of zucchini, I mix it into a chocolate cake. My husband likes zucchini as a vegetable but doesn't like it in cake . . . OR SO HE THINKS! I use sleight of hand, put it in the cake, and hubby doesn't even know the difference.
